Zucchini and mozzarella bruschetta

    Bruschetta is an appetizer served at the beginning of a meal. There’re a lot of ways to cook it, and today we suggest trying one with juicy zucchini, soft mozzarella and fragrant mint. The recipe is taken from the book “Jamie&Friends “Italian food”.

    Prepare the ingredients. Wash the mint and zucchini, peel the garlic.

    Slice the zucchini and sprinkle with some salt. Leave for 15 mins till the juice is released.

    Pat dry the zucchini. Heat 2 tbsp olive oil in a pan, add the zucchini and season with salt and pepper. Fry over high heat, 4-5 mins per side.

    Tear the mozzarella into pieces.

    Grill the bread slices on a dry pan or toast in the oven. Peel the garlic, cut in half and rub the bread.

    When the zucchini slices are done, transfer them onto a plate, squeeze the juice of the lemon, add mint leaves and mix slightly. If the leaves are too large, chop them.

    Top the bread with zucchini and mozzarella. Serve immediately. Zucchini bruschetta is done! Enjoy your meal!

    Tips:

    1. You can substitute squash or eggplants for zucchini and use fresh basil instead of mint.
    2. You can use any wheat bread, e.g. a ciabatta, a baguette or an ordinary loaf.
