Zucchini and meat gratin with cheese crust

Ingredients

Simple and delicious dinner in 40 minutes? Easy! Now, when squash is in season, we suggest cooking gratin. Gratin is a name for dishes that are baked in the oven till golden crust. In our recipe we have meat as a substantial base, zucchini or squash layer for juiciness and cream to unite everything. The final tempting touch is the cheese crust. This dish is going to be your favourite! The recipe is based on the one by “Uzhin doma” (“Dinner at home”).

Prepare the ingredients. Wash the zucchini, peel the onions and garlic. Mince the meat.

Preheat the oven to 200°C. Remove the stem from the zucchini. Grate the latter roughly and drain in the colander. Set aside.

Finely chop the onions and garlic. Heat a pan with some oil over medium heat and fry the onions for 2-3 mins, stirring from time to time. Add the ground meat and garlic.

Fry, breaking the lumps till the mince changes its colour, 3-5 mins. Season to taste, mix and transfer to a bowl.

Squeeze as much liquid as possible from the zucchini. Add a little oil to the same pan and fry the zucchini, stirring, 3-4 mins. Season to taste and remove from heat.

In a separate bowl combine the eggs with half-an-half and whisk till homogeneous. Season to taste, if you want.

Spread half of the zucchini over the bottom of the 17x30 cm form.

Mash the ground meat energetically with your hands and put it into the form, too. Top with the remaining zucchini. You don’t have to press them tightly as the cream should come through it.

Pour the cream and eggs mixture over the gratin. It should go through all the layers, not stay on top.

Roughly grate mozzarella and sprinkle on top of the gratin.
