Zhingyalov hats

Ingredients

  • FOR THE FILLING

Zhingyalov hats is a traditional Artsakh dish. It has a special meaning, as it can be a reason to gather all the relatives for a chat, news exchange and just to feel family spirit. It is similar to qutabs and other flatbreads but it is traditionally cooked with 20 different herbs. Of course, it is not always possible to find all of them, so we suggest cooking them with available seasonal greens. The recipe was taken from Gayane Breyova’s book “Armenian recipes”.

Step 1

Prepare the ingredients. Wash the greens (cilantro, parsley, spring onions, dill, spinach, lettuce, beet tops or any other greens).

Combine the flour with sour cream and salt, add water at room temperature and oil.

Knead elastic dough. Cover with a towel and leave for 30 mins.

Chop the greens, add salt and oil, mix.

Divide the dough into portions, roughly 60 g. Dust the working surface with flour roll each part thinly and oval-shaped.

Spoon the filling into the centre of each oval.

Fold and the opposite sides towards each other, press the filling slightly and let the excess air out. The flatbread should be oval-shaped. When the air is out and the filling sticks to the dough, seal the edges with your fingers.

Fry the flatbreads on a dry pan over medium heat on both sides, about 5 mins per side. They should turn golden.
