Whole wheat and Greek yogurt flapjacks with baked fruits

Fluffy whole wheat and Greek yogurt flapjacks are an easy-to-make and very healthy treat. Add some baked fruits, and they will be incredibly tasty. They will fill your morning with tempting fruit and spices flavours and give you energy for the upcoming day.

Preheat the oven to 150°C. Prepare the ingredients.

Make the topping: wash, pat dry and cut two apples and two pears in cubes, combine them in a bowl. Sprinkle with lemon juice, give a stir and set aside.

Melt the butter and combine with sugar and the spices in a separate bowl.

Add honey or agave syrup to the mixture.

Pour the butter and spice mixture onto the fruits, mix carefully.

Spread the fruits on the baking sheet laid with parchment and bake for 1 hour.

Remove the baked fruits from the oven. Sort out the walnuts and chop them roughly. Add them to the fruits, combine. The topping is ready.

While the fruits are in the oven, combine all the dry ingredients in a bowl, i.e. flour, sugar, salt and baking powder. Set aside.

In another bowl whisk eggs, yogurt and milk till homogeneous.

Only now add the melted coconut or ordinary butter. Mix again, till the mixture is homogeneous.

Add the liquid mixture to the dry one, mix thoroughly.

Before you start frying your flapjacks, grease the pan slightly (you will not need to extra-grease it later). Heat the pan and fry 10-12 cm flapjacks, 2-3 minutes per side.

Tips:

  1. If you like baked nuts, add them to your fruits after 30 minutes of baking. You can bake your fruits in advance and keep in the fridge. If so, warm them up in the microwave before serving.
  2. You can use this topping with granola or ice cream as well.
  3. If you don’t have almond milk, you can take cow milk instead. You can also substitute ordinary butter for coconut butter.
  4. You can also freeze your flapjacks. In this case layer them with parchment and defrost in the microwave. Thus, you will have a reserved breakfast, just in case.
  5. To make the preparation still easier and save time in the morning, combine all the dry ingredients the day before. In the morning add milk, yogurt and eggs.
