Ingredients

Crepes made from whey batter are delicious and have a lot of small holes. This is the recipe you should try if you have made some cottage cheese and need to use the whey or if your milk has turned sour. Baking soda makes the crepes fluffy, and due to butter in the batter you don’t need much oil for frying. If your pan is good, you will only have to grease it before the first go.

Whisk the egg with sugar and a pinch of salt till a little foamy.

Heat the whey slightly in the microwave but don’t let it get too hot. Pour some of the whey into a separate bowl, add the rest to the egg and mix well.

Add the baking soda to the reserved whey, mix well and add to the egg mixture.

Divide the batter in two and in parts add the flour to one of the parts. Mix well till you get thick batter. You may add some more whey, if you want, to make it easier to stir.

Add the reserved egg and whey mixture and mix well again. The consistency of the batter should resemble yogurt or thin sour cream. Add the oil and mix well.
