Vegetarian burger with mushroom chop, sesame sauce and pickled onions

Homemade burgers are not just quick and tasty but also healthy! Moreover, the very process of cooking offers lots of opportunities for experiments and creativity.  In this recipe we combine mushrooms with rice, which make them soft inside and crunchy outside. Spicy and very flavourful with some unexpected texture due to sun-dried tomatoes and sunflower seeds. You can use any vegetables and herbs that are in season. And why not adding some piquant touch by using some pickled sweet onions, which is quite sour? This is what you need to tickle your taste buds. But you may also use some pickled cucumbers. You may vary the buns as well: try whole grain or bran ones. All the ingredients may be prepared and stored in advance (check out the advice at the end of the recipe) – this will make the preparation quick and you’ll feed a crowd in just 15 mins. Besides, it’s a great thing for a picnic!

Step 1

Prepare the ingredients. Wash the vegetables and herbs.

Boil the rice in 300 ml water for 25 mins. Remove from heat and let cool. The rice should be soft and sticky, so add some more water when cooking if necessary.

Make the pickled onions. Peel the red onion, cut in half and then slice thinly. In a sauté pan combine the apple vinegar, honey, salt, ground cloves and aniseed, add the sliced onions. Bring to a boil over medium heat, let the onions soften for 3 min, then remove from heat and let cool.

Peel and finely chop the mushrooms, onions and garlic.

Heat some olive oil (or any other that can be used for frying) over medium heat, add the chopped onions and garlic and cook for several mins. Add the mushrooms and fry them, constantly stirring, till reduced in volume.

Fry the sunflower seeds on a dry pan till golden and chop them with a knife.

In a deep bowl combine the cooked rice, mushrooms, finely chopped tomatoes, seeds, honey, soy sauce, paprika and 100 g chickpeas flour. Mix thoroughly.

Make the breading mixture: combine 20 g chickpea flour and black sesame seeds. Heat some olive oil (or any other) over high heat. Shape flat 7-8 cm chops 1,5 cm thick. Coat them in chickpea and sesame mixture and fry over medium heat on both sides till crunchy. Add some more oil, if necessary.

Make the sesame sauce: in a blender combine the sesame seeds, lemon juice, olive oil, water, chili and salt, whisk till the mixture resembles thick sour cream. Peel the avocados, cut in halves, remove the stone and chop. Thinly slice the cucumber. Cut the buns in halves and toast the inner sides on a dry pan (or on a grill) for a couple of minutes. This will make a nice texture and prevent the buns from soaking.

Assemble the burgers alternating the layers: the lower part of the bun, some sesame sauce, a mushroom chop, avocado, cucumbers, pickled red onions, herbs. Top with the upper part of the bun.

Tips:

1. You can also use sushi rice or any other sticky one instead of the black one.
2. You can cook the rice a day before and store in the fridge.
3. You can also prepare the pickled onions in advance and store in the fridge in an air-tight glass jar up to several weeks.
4. The mushroom chops can be cooked in advance and stored in a freezer up to 1 month. You’ll only have to stew them, covered, with some water till fully defrosted and then fry them over high heat with some olive oil till crunchy.
