    Moussaka is a famous dish from Mediterranean and Balkan countries, and there’re lots of ways to cook it. The main ingredient of this dish is eggplant that may be baked with ground meat or other vegetables. Try this vegetable moussaka with thinly slices potatoes and spinach leaves, which make it especially delicate and light.

    Prepare the ingredients. Preheat the oven to 200°C, wash the vegetable and the spinach.

    Slice the eggplants lengthwise 1 cm thick, sprinkle with salt and leave for 20 mins to let the juices come to the surface. After that, wash them in running water. Peel the potatoes and garlic, remove the stems from the spinach.

    Thinly slice the potatoes, garlic and tomatoes.

    In layers put the eggplants, spinach, potatoes and garlic into a 20x30 cm baking form. Repeat the procedure twice (in total). Season the potato layers with salt.

    Top with tomatoes and drizzle with oil.

    Pour the tomato juice on top. Bake in the middle of the oven for 45-50 mins.
