    Vareniki are everybody’s Russian favourite with lots of different fillings. Satisfying and delicious home-made dumplings will bring coziness to any meal. Today we share a Lenten potato version. You will definitely find all you need in any kitchen. Besides, forming the dumplings can become one of the most pleasant family traditions!

    Prepare the ingredients. Peel the potatoes, cut and boil in slightly salted water.

    Meanwhile, dice the onion. Fry it with some oil till golden. Pour off the water from the potatoes and reserve some from the puree. Mash the potatoes, add the fried onions (you may also reserve some for serving), mix everything up. If you want, add some more oil if the one from the onions is not enough.

    Sift the flour into a bowl, make a well in the centre, add the salt, water (at room temperature) and oil.

    Knead the dough with your hands or in a stand mixer using a hook. If the dough is not too thick enough, add a little flour. Mix till the dough is homogeneous. It should be soft, elastic and non- sticky.

    Separate ¼ of the dough, cover the rest with a towel. Dust the working surface with some flour and roll the dough 3mm thick.

    Use a cutter or a glass to cut the circles. Put 1 tsp (or less depending on the size of the circle) of the filling in the centre of each one.

    Fold the circle in half and seal the edges. If the dough is too thick, it may shrink after cutting. If so, you may roll the circles a bit till they have the necessary size.

    Put the shaped dumplings onto a towel or a cutting board dusted with some flour. You may freeze them on the board and then transfer to plastic bags to store in the freezer. To serve, boil the dumplings in the boiling slightly salted water till they come to the surface.

    Transfer the dumplings onto serving plates, drizzle with some oil and sprinkle the reserved fried onions on top.

    Tips:

    If you’re not a vegan or don’t keep the Lent, you may use milk and butter for the potato mash.
