Vegan Christmas cake

Ingredients

What we have for you today is a recipe of Vegan Christmas cake – there is no butter, no oil even, and no eggs, but with lots of spicy flavors, dried fruits and nuts. This cake is no doubt just as good as any classic Christmas cake, but much healthier.

Prepare the ingredients.

Wash the dried fruits. Finely cut the apricots, prunes and figs, pour in the rum, press down with a plate and leave to soak for 3 hours (or overnight).

After 3 hours combine the flour, sugar, vanilla sugar, salt, and baking powder. Thoroughly squeeze excess liquid out of the soaked fruits (it's important), then add them to the flour mixture along with the apple puree and lemon juice. Mix well.

Preheat the oven to 320 F. Grease the 11x30 cm baking tin with vegetable oil, line its base with baking paper, this way it would be easier to take the cake out of the tin. Pour the mixture into the baking tin and even out. Wrap the tin in a silicon baking mat for the cake to get cooked through without getting burnt, then place it the oven on a rack shelf, and place a baking tray beneath it.

Bake the cake for 2.5-3 hours at 302-320 F. Once a wooden skewer inserted in the center of the cake has come out clean, the cake is ready. Wrap the cake in tinfoil and store in a cool place.

Tips:

You can skip alcohol in this recipe, simply substitute it with orange juice mixed with orange zest.
