Unleavened cottage cheese braided buns

Ingredients

Fluffy, cottage cheese and super-quick, these buns are perfect for a morning cup or tea or coffee. It’s easy to make braids from the delicate cottage cheese dough but if you are short of time, just make them round – they will be no worse!

Prepare and scale the ingredients. Finely grate lemon zest from ½ lemon (only the yellow part).

In a small bowl slightly whisk the egg. In another bowl combine 2/3 of the egg (reserve the rest for brushing), cottage cheese, sugar, salt and lemon zest. Mix till homogeneous. Sift the flour.

Add ½ flour and baking powder to the liquid ingredients. You will need 170-240 g depending on the cottage cheese. Mix everything. Add the rest flour gradually to get soft dough. Don’t add too much, or the buns will be quite tough.

Divide the dough into balls 60-65 g each.

Preheat the oven to 180°C. Dust your hands and the balls slightly with flour and make a long rope carefully, fold in half and twist.

Layer the baking sheet with parchment and transfer the buns leaving some space between them. Brush them with the remaining egg (if there’s too little left, add 1 tsp milk). Sprinkle with a little sugar.

Bake in the middle of the oven till slightly golden, about 20 mins. Cottage cheese buns are done. Enjoy your meal! Serve warm or at room temperature.
