If your soul is longing for something sweet but extraordinary, there is a quick and easy solution – bake a soft citrus cake with raisins, for which you will need quite typical set of ingredients. And with New Year season coming up there always are oranges and tangerines in every house. Bright sugary baked tangerines crust will cheer up, while  cinnamon and juicy orange pieces in melt-in-the-mouth cake will remind you of the holiday. Only 20 minutes of your time spent on actual cooking and less than in an hour you will be able to please your unexpected guests and enjoy the citrus cake yourself.

Prepare the ingredients. Preheat the oven to 338 F.

Grate the orange zest (the orange layer only), peel the orange and divide into segments, then cut each one into 3-4 pieces. Wash and dry off the raisins. Mix orange pieces and raisins with 1 tablespoon of flour (this will keep them from sinking to the bottom of the cake while in the oven).

Using a mixer whisk eggs and sugar on a maximum speed for 2-3 minutes.

Add the flour, grated orange zest, cinnamon and baking powder. Stir carefully until all the flour is mixed in. After that stop stirring right away, otherwise the cake might be dense.

Add the orange pieces and raisins to the dough, mix in. Turn the dough out into the baking tin 23 cm in diameter, greased with butter and sprinkled with flour.

Finely slice the tangerines into circles without peeling them, then arrange the slices beautifully to cover the cake surface.

Sprinkle the cake with brown sugar and place on middle shelf of the preheated oven and bake for 40-60 minutes, depending on the size of the baking tin. Use a wooden skewer to check if the cake is cooked through - the skewer inserted in the middle of cake should come out clean.

Allow the cake to cool and take it out of the tin.

Спасибо за рецепт! Собираюсь печь уже четвертый раз за 4 недели ? И каждый раз в двойном объёме. И муж, который не любит цедру, ест и нахваливает: как вкуууусно! Ой, а мне кусочек попался, в котором прям одни апельсины… ммм! ??
