Prepare the vegetables for the soup. Wash, peel and chop them. You don’t need to chop them finely, as they will be pureed with a blender later on.

Heat olive oil in a heavy pan, add the chopped onion. Fry over medium heat, stirring from time to time, till the onion is transparent. It will take about 1 minute.

Add carrot and ground paprika. Stir and cook for another 2-3 minutes.

Add bell pepper, tomatoes and tomato juice. If you use whole tomatoes, there is no need to blend them. Mix and season to taste. Bring to a boil and cook for 15-20 minutes over medium heat till the vegetables are soft. You can also use fresh tomatoes instead of the canned ones. In this case peel and chop them.

Puree your soup with a blender. You may want to have some vegetable pieces in your soup for a somewhat rough texture.
