Step 1

Slice up the multigrain bread and put on the plates depending on the number of toasts you plan to make. Wash radish, pepper, tomatoes, lettuce and rocket. Tear dried herbs by hand and put on bread. Cut radish into circles, cherries into 2 pieces, pepper into thin slices. Wash mushrooms, add a bit of water and cook over a high heat for 2 min. Cut mushrooms into 2-3 pieces.

Heat 700 ml of water in a small saucepan (water should take not more than 2/3 of the saucepan volume); once you see the air bubbles beginning to form over the base of saucepan, add vinegar and switch heat to medium. Break an egg into a bowl keeping yolk undamaged.

Using a fork, create a whirlpool in the saucepan moving from the edge to center. Continuing to quickly stir the water, pour egg in the middle of the whirlpool and immediately take fork out. To ensure the egg keeps its nice shape turn the whirlpool in the opposite direction as soon as it slows down. Cook poached egg for 2-2.5 min.

Once ready, put the egg into a bowl with cold water to stop coagulation and remove the taste of vinegar. Place vegetables and poached eggs over the toasts. Add salt and season with dried herbs.
