Tiramisu cupcakes with chocolate and cherries

These delicious and unusual tiramisu cupcakes will be the centerpiece of your table. Everyone will love them! You may adapt the recipe for children by replacing the Amaretto syrup with berry or fruit juice.

Step 1

Preheat the oven to 170°C. Separate 3 egg whites and yolks. Whisk the whites till foamy, 2-3 mins. Add the sugar without stopping the mixer. When the whites are thick and glossy, add the yolks one by one, then the vanilla extract, sifted flour and starch. Mix carefully with a spatula till homogeneous and trying to save the airiness.

Step 2

Line the cupcake tins with baking cups, put 1 tbsp batter into each one, sprinkle with cocoa powder and cover with another 1 tbsp batter. The tins should be filled no more than to 2/3. Bake for about 15 mins (check the doneness with a toothpick). Remove from the oven and let cool.

Make the mascarpone frosting. In a small pan boil 200 ml water, remove from heat and put a bowl with yolks onto the pan, so that the bottom of the bowl doesn’t touch the water. Add the sugar and whisk for about5-8 mins till the sugar is dissolved and the mixture turns pale. Remove the bowl from the pan and leave to cool for 5 mins.

Mash the mascarpone in a separate bowl. Add the yolks and mix with a mixer on a low speed till homogeneous.

Soak the cupcakes with the coffee and liqueur syrup (to make the syrup just combine the
ingredients). Top with the frosting using a spoon or a pastry bag.

Grate or chop the chocolate and decorate the cupcakes.
