Ingredients

Today we are going to make one of the best-known Italian desserts, and this is tiramisu. Tiramisu (tira – pick, mi – me, su – up) is a dessert consisting of the alternating layers of savoiardi soaked in coffee and delicate mascarpone and egg cream. The dessert is usually sprinkled with cocoa powder. As for savoiardi, you can buy them in the shop, or make your own ones (check our website for the recipe).

So, pour 2 heaped tsp coffee with 230 ml boiling water, add 15 g icing sugar, mix and leave to cool. Meanwhile make the cream. Separate egg whites and yolks, then whisk the yolks with 60 g icing sugar.

Whip the egg whites to firm peaks. If the peaks keep their shape without drooping, they are whipped correctly.

Now assemble your dessert. Take a suitable form (we used a 15x30 cm). Add cognac to the cooled coffee and dip each savoiardi into this mixture for just one second. Arrange them on the bottom of the form straight away.

Continue till the whole bottom is covered with savoiardi. If you dip them in coffee mixture for too long, they will absorb too much liquid and the dessert will be too moist. It is better not to plunge savoiardi into coffee completely, just halfway will be enough.

Arrange another layer of coffee-soaked savoiardi.

Spread the rest of the cream on top. Cover the dessert with a cling film and refrigerate for 2 hours.
