Sweet onion and potato gratin

Ingredients

We suggest cooking a simple but delicious potato and sweet onion gratin. The delicate and creamy gratin with a nice cheese crust is a real treat. The recipe as taken from Jamie Oliver’s book “Meat- free”. You can use either sweet yellow onions, or shallots, or white. Or you can even substitute fennel, squash or celeriac for onions.

Prepare all the ingredients.

Thinly slice the onions and potatoes. Mince the garlic. Boil the potatoes in slightly salted water.

Meanwhile, heat some olive oil in a sauté pan over low heat, add the onion slices, garlic, bay leaves and 3 sprigs thyme (optional).

Cook over moderate heat for about 30 mins till the vegetables are golden, stirring from time to time. Remove and discard the bay leaves and thyme, if using. Set aside the vegetables.

Preheat the oven to 200°C. Prepare the baking form (we used a 30 cm). Spread half of the potatoes over the bottom of the form, continue with half of the onions and garlic, another layer of potatoes and finally top with the remaining onions.

Combine the cream with the stock and pour on top. Sprinkle the finely grated parmesan on top.

Bake in the middle of the oven for about 30 mins till golden. Serve warm.
