Stuffed eggs with salmon and homemade mayonnaise

Stuffed eggs are a popular appetizer for a festive table. We suggest stuffing them with red fish and make homemade quail eggs mayonnaise as an alternative for store-bought.

Prepare the ingredients.

Hard-boil the eggs (8-10 mins). Meanwhile finely mince the quick-cured or smoked salmon and 2 dill sprigs. Reserve the third sprig for decoration.

Remove the eggs from heat and pour with cold water. Peel and cut in half lengthwise.

Remove the yolk and mash with a fork.

To make the mayonnaise, combine 6 quail eggs, a pinch of salt and sugar and black pepper in a blender bowl. Whisk at maximum speed for 20 secs, add 1 tbsp oil and whisk for 20 secs. Add 2 more tbsp oil, whisk for 20 secs again. Go on whisking like this, till all the oil is used. You’ll have 7-8 goes. Finally, you may add the juice from ¼ lemon and whisk the mayonnaise for 1 min.

Combine the mashed yolks with the fish, dill and 3 tbsp mayonnaise. Put the remaining mayonnaise into a jar, cover with a cling film and store in the fridge for up to 1 week.

Tips:
