Stuffed dog-salmon in a bacon crust

No ideas about what to cook for a festive table? Here’s a nice recipe! Dog-salmon is stuffed with cottage cheese, wrapped with bacon and baked in the oven. But it’s not all! To give our fish some extra flavour, we’ll sprinkle it with wine during cooking. We’re sure your guests will like it!

Prepare the fish – remove the head, discard the guts, the backbone and thick rib bones. You’ll have fillet with skin. Peel off the scales. Wash the greens. Slice the bacon thinly. We recommend using not creamy cottage cheese.

You may use store-bought breadcrumbs or toast the sliced bread in the oven. Mince (but not crumble) the bread and garlic. Fry the crumbs with some oil till golden. Add the garlic, mix and cook for another 2 mins. Remove from heat.

In a bowl combine the cottage cheese, finely chopped greens and breadcrumbs, season to taste.

Preheat the oven to 170°C. Season the fish with salt slightly. Layer the baking form with foil. Stuff the fish and wrap in bacon. We recommend doing it in the form: put the bacon slices tightly and slightly overlapping each other, then put the dog-salmon, skin down, so that the fish covers no more than a half of the bacon. Spread the filling evenly.

Fold the fish in half, so that the filling is inside.

Wrap the fish in bacon.

Pour the fish with some wine (about 50 ml). Bake in the middle of the oven for about 1 hour. Pour the fish with the wine 3 more times while cooking.
