Stuffed crepes with mushrooms and mozzarella

Can anything be tastier than crepes? We think yes, and it’s our crepes with the most delicate filling with mushrooms and mozzarella. This dish is quite difficult to make but you will like the result. We recommend serving them immediately, warm and with sour cream.

Prepare the ingredients. Remove them from fridge so that they are at room temperature.

In a bowl whisk the eggs with sugar and salt. Add the milk and mix well. Add the sifted flour and mix well to get rid of the lumps.

At the end, add the oil and mix. Set aside the batter for 10-15 mins.

Fry the crepes and a hot pan on both sides. You may slightly grease the pan with some oil before frying the first one.

Meanwhile, make the filling. Finely chop the onion and fry till golden with some oil, about 5 mins. Stir from time to time.

Prepare the mushrooms. If you use fresh mushrooms, wash or peel them, then slice. If you use frozen mushrooms, you may add them to the onions and cook till all the liquid has evaporated. Season with some salt to taste and fry till fully cooked. Roughly grate the mozzarella and combine with the mushrooms. As soon as the cheese melts, remove the pan from heat. The filling is done!

Spoon 1-2 tbsp filling onto each crepe, slightly away from the centre.

Fold the shorter part of the crepe to the centre, and then fold the right and left sides.

Roll the crepe. Repeat the procedure for all the crepes and filling.
