An incredibly simple and nutritious dish that will be appreciated by all meat-lovers! Rich tomato gravy, soft and delicate meat with an exquisite paprika aftertaste, satisfying dumplings – this is what you need to have a nice family dinner!

Step 1

Prepare the ingredients. Preheat the oven to 180°C. Remove the butter from fridge to soften.

Wash the pork, pat dry with paper towels and cut into cubes.

Heat the pan, add the oil and fry the pork in portions till lightly golden. Transfer into a heatproof form with a lid and set aside. If you don’t have a lid, use thick foil.

Slice the tomatoes. If you use whole canned tomatoes, slice them as well.

Peel the onion, cut in half and slice thinly. Melt the butter in the pan you used for frying pork and quickly fry the onion for 2-3 mins. Add the paprika and flour, mix and cook for 1-2 mins.

Add the tomatoes to the pan, pour with the juices from the can, add about 200 ml stock, season to taste with sugar and salt. Mix and cook till it boils.

Combine about 1 ladle of the liquid from the pan with sour cream and return to the pan. Pour the gravy onto the meat, cover with a lid and cook in the oven for 1 hour. Add some water, if necessary, as the meat should be cooked in liquid.

10 mins before the meat is done, make the dumplings. Combine the flour with the baking powder, butter, salt, caraway and sour cream, mix till homogeneous. It can be done in a food processor. Gradually add the water. The dough should be soft and non-sticky.

Make small dumplings (no more than 1 tbsp dough per one dumpling). Remove the pork from the oven and add the dumplings, slightly press them into the gravy. Cook, covered, for another 15 mins.

Remove the dish from the oven and cover with a towel till served. Put the dish onto deep plates and decorate with chopped greens (optional).

Tips:

  1. You may use water instead of stock.
  2. If you add smoked paprika, you’ll have a more rich flavour.
  3. You may use any sour cream, fat content doesn’t matter. May be replaced by thick yoghurt.
  4. When the dish is cooled, you may transfer it to a container or thick food zip bag and freeze. Store up to 3 months. Defrost in the bag on the container in the fridge overnight. Finally, reheat and serve.
