Ingredients

Stewed cabbage is a popular Russian dish. It is good in many ways – delicious, cheap and satisfying. If you add some mushrooms, meat or beans, you’ll get a new dish. Today we suggest a Lent variant of stewed cabbage with beans that is rich in proteins and will substitute meat well.

Soak the beans in cold water and leave overnight.

Next day, rinse the beans, put into a pan, pour with water and bring to a boil. Cook about 40-50 mins, add some salt 10 mins before the beans are cooked. Pour off the water.

Peel the vegetables. Dice the onion, roughly grate the carrot. Pour the oil into a heavy-bottomed pan or kazan, add the carrot and onion. Mix well and fry over medium heat till soft, about 5 mins.

Remove the outer leaves from the cabbage, shred thinly.

Add the cabbage to the fried vegetables. Mix well, add tomato paste and 200 ml boiling water. Season to taste, mix well, cover tightly with a lid and cook over low heat, stirring from time to time, about 40-50 mins till the cabbage is soft.

Cover with a lid and cook for 10 mins more.
