Do you like baked goods with honey? And gingerbreads? If so, today’s recipe is just what you need. This spicy honey cake has all the advantages of honey cakes and gingerbreads. It has a strong flavour due to the honey and spices. The cake remains soft for a long time if you keep it in an air-tight container. But we are sure you won’t wait to eat it! It is so good with a cup of coffee and some butter. The recipe is taken from the book “The little chef. Simple recipes for the whole family”.

Preheat the oven to 160°C. In a thick-bottomed sauté pan combine the butter, milk and honey. Cook, stirring from time to time, over medium heat till the butter melts. Transfer the henoy mixture to a bowl and leave to cool.

In a big bowl combine both the flours and the baking powder. Add the salt, brown sugar and 10 g spices. We used a gingerbread mix that consists of ground cinnamon, aniseed, nutmeg, genger and cloves. Mix.

Add the cooled honey mixture to the dry one, add the egg and mix thoroughly.

Grease the baking form (we used a 13x23cm) with some butter and dust with some flour, shake off the excess. Pour the batter to the form and bake for 55-60 mins. Check the doneness with a toothpick, it should come out dry. The precise time may vary depending on your oven.

Leave the cake to cool slightly in the form, then remove it carefully and cool completely on a rack.

Tips:

1. You may also add some orange zest to the batter and drizzle the baked cake with some orange
juice (pierce it with toothpicks before doing this).
2. If you want, add 1 tbsp chopped almonds, hazelnuts, raisins and dried apricots each.
