Spicy glass noodles with chicken and vegetables

Ingredients

If you like Asian food and quick recipes as we do, we suggest cooking glass noodles. All the ingredients are simple and can be found in any shop. Glass noodles are made from beans and get their name because of the transparency acquired after cooking. It is a good idea to have some glass noodles in your cupboards just in case, as it doesn’t take a lot of time to cook. You’ll only have to soak it in warm or hot water. We’ll tell you the right way to cook it. It doesn’t have any specific taste, so let’s add some chicken and vegetables. Those who like it hot may also add some chili. This is going to be tasty! And hot!

Prepare the ingredients. Peel the carrots and onions (white or red), wash the peppers. If your beans are frozen, plunge them into hot water for 3 mins and then drain in the colander and rinse with cold water. Wash the chicken thighs; remove the excess fat and joints, if necessary.

Mince the garlic, cut the onions in half twice, then slice thinly. Slice the carrots diagonally and cut the slices into thin strips. Remove the core and membranes from the pepper and cut the flesh into thin long stripes.

Take a big deep pan or, preferably, a wok. Heat 1 tbsp oil in the pan and fry the onions with the garlic over medium-high heat for 2 mins, stirring from time to time. This will not just speed up the process but also keep the nice bright colours. Cook the vegetables till a little soft (e.g. the carrots should bend easily) and still have their bright colours. Add the carrots and peppers and cook for 2 mins, stirring.

Cut the chicken into thin stripes. Don’t make them too thin, as it will shrink when cooked. Add the chicken to the vegetables and cook over the same heat, stirring.

As soon as the chicken changes its colour (after 5-6 mins of cooking), add the beans.

Sprinkle with chili powder at once. If you want your dish moderately hot, 1 tsp will be enough. If you want it hotter, add 1,5 heaped tsp but we wouldn’t recommend to add more. Stir.

Just after adding chili, soak the noodles. Out them into a bowl, pour with hot water so that they are fully covered. Leave for 2 mins.

Meanwhile, add the 100 g soy sauce to the vegetables. Reserve 20 g just in case, if there is not enough liquid left at the end.

Drain the noodles well and add to the vegetables. It shouldn’t be too soft.

Mix well so that the sauce covers the noodles evenly and add salt to taste. Cook for 2 mins and remove from heat immediately. Try the vegetables with the sauce and adjust the spices if necessary.
