Snowflake-shaped deep-fried pastries (Khvorost)

Ingredients

To make this treat you may have to remember your childhood and call your parents, as they might still have special equipment for making shaped pastries. The crusty snowflakes will drive you crazy by just their sight, but if you dust them with icing sugar with cinnamon or honey, you will not be able to stop! The recipe is not only convenient to make, but also quite thrifty – you will have 50-60 snowflakes from just 1 glass of flour.

Prepare the ingredients.

Sift the flour, salt and baking soda into a deep bowl. If you want, add 1 tbsp almond flour. Add the sugar, egg and vodka, mix.

Gradually add 200 ml cold water, mix thoroughly and whisk.

If the batter is too thick, add 20 ml water. The batter should have the consistency of crepe batter.

Heat the oil in a pan. Check the temperature by dropping some batter into it – it should come out immediately. Plunge the form into the boiling oil first and let it heat. Then plunge the hot form into the batter for several seconds, so that it is coveres up to the edge of the form.

Plunge the form with the batter into the hot oil again and fry till golden. It takes the thin batter several seconds to get cooked, and it easily separated from the form without losing its shape. Put the cooked khvorost on a paper towel to get rid of excess fat.
