Today we’re sharing one of our best recipes with you – chocolate cake with cream cheese frosting. This sponge cake will surprise you with its exciting taste and ease of preparation. You could even make it during short children’s nap – just mix all the ingredients, pour into multi cooker bowl, and in 1 hour you will get a fluffy, flavored chocolate sponge cake! As an option you could add any fruits or berries into the frosting – or may be even more chocolate? It’s really convenient that you could make this sponge cake the day before the celebration and then simply fill it with cream few hours before the guests arrive decorating the cake to your taste.

Prepare the ingredients.

30 min before you start making the sponge cake, take egg, milk and butter out of fridge so that they warm to room temperature. Place granulated sugar to the big bowl, add vanilla sugar, egg, vegetable oil and milk. Stir the mixture up with a whisk until sugar is fully dissolved (1-2 min).

Sift together flour, cocoa powder, soda and baking powder. Stir the batter with the whisk accurately until the ingredients are evenly combined (be careful so that flour and cocoa don’t spread across your kitchen).

Pour in 130 ml of boiling water and mix it with the whisk thoroughly until smooth, even mass.

The density of the dough reminds thin sour cream, it should trickle down the whisk. If it’s too thick, add 10 more ml of boiling water and mix again. Let the dough rest for 5 min.

Grease multi cooker bowl with butter, pour in the dough and set “Baking” mode for 1 hour.

You could check the readiness of the sponge cake easily – getting ready, the dough would become dark from the edges to the middle; once the sponge cake has the even color – it’s ready. Check the readiness with a wooden toothpick – it should come out dry. Cool the ready sponge cake a bit right in the multi cooker bowl (remove the bowl out of the device first), then turn it over to the stand which is normally going together with the multi cooker and is used for steam cooking. Attention: in some multi cookers the sponge cake could be too soft and you need to be very careful taking it out of the bowl. In order to get the required structure of the sponge cake, wrap it using the plastic wrap and put into the fridge for 1-2 hours or leave it there overnight. If you don’t have enough time, just let the sponge cake cool to the room temperature.

Take ready sponge cake out of the plastic wrap and split it up into 2 or 3 equal parts (you could check our FAQ section to know how to do it smoothly). The split sponge cake could be soaked: mix half tablespoon of any jam or syrup with 3 tablespoons of hot water, stir well and apply on the cake evenly.

For the frosting: put cream cheese into the mixer bowl, pour in cream, add 30 g of powdered sugar and beat the mixture until even. Adjust the taste with powdered sugar. You could add any berries into the cream, say, strawberries: set few berries aside to decorate cake later on, wash and cut in cubes the remained strawberries, then mix it carefully with cream using spatula or spoon.

Put a half of cream on the bottom sponge cake, make it even and cover with the remained sponge cake. Use the rest of cream to smooth out the sides and the top of your cake.

You could also decorate the cake with ganache. To make it, bring 80 g of 20% cream to the boiling (but do not boil it), add 80% of chopped dark chocolate and stir intensively with a whisk until smooth. Place ganache into the fridge for 20 min, then stir up again and decorate the cake. Put the cake into the fridge for 1-2 hours so that it is soaked with the filling. If ganache becomes too hard, warm it a bit.

Готовили тортик в подарок на день рождения, гости и именинница были в восторге и мы тоже!) В качестве ягод в начинке использовали вишню, очень вкусный, а главное легкий торт. Большое вам спасибо за рецепт!)
