Chocolate galette with cottage cheese and plums

Break the chocolate into pieces and put it together with butter in a small bowl. Heat everything up in a microwave oven for 20-30 minutes. Whisk until the mixture is smooth and homogeneous. Let the chocolate cool and mix in an egg yolk with a whisk.

In another bowl sift flour and mix it with cocoa powder and sugar powder. Add chocolate to dry ingredients and knead the dough. Mix in water into the dough little by little and try to form it into a ball. The maximum amount of water is 15 ml.

Once the dough is smooth and the ball is formed, wrap it in a plastic wrap and refrigerate for 20 minutes.

Wash, cut the plums in halves and pit them. Mix the plums in a bowl with brown sugar and set aside. An important tip: if you use firm or unripe plums we recommend you to caramelize them first: stew with sugar in a small amount of water.

For the filling combine cottage cheese (if it is dry or grainy you can grind it through sieve or blend) with sugar, an egg yolk and semolina. Wash a lemon and grate half of its zest (only yellow layer, white layer will embitter the dish). Mix all the ingredients and set aside.

Preheat oven to 356 F. Take the dough out of the fridge and knead it (if it’s crumbly, add some cold water and knead it with your hands). Roll the dough thinly between two pieces of parchment paper. Take away the upper layer of parchment paper and cut rough sides.

Spread the filling in the center of each galette, leaving a 5 cm border.

Place plums (with the cut side up) over the filling. Sprinkle it with one tablespoon of brown sugar.

Fold the dough accurately over the filling toward the center. You may do it with the help of parchment paper so as not to wreck the dough.
