Blend the sauce with a blender. You don’t need your sauce to be perfectly smooth; some small pieces will give a nice texture. Return the sauté pan to the heat.

Wash the dill, cut off the stems and finely chop the leaves. Add the dill and a heaped teaspoon cornstarch to the sauce. Cook the sauce over moderate heat for 3-5 mins, stirring from time to time with a whisk or a silicone spatula. Remove the sauce from the heat, cover with a lid and set aside for 5-7 mins. It will thicken slightly.

Remove the skin from the fish steaks. Put them onto a hot pan with some olive oil. If you want, add a sprig of thyme or rosemary or sprinkle with some lemon or lime juice. Fry over medium-high heat for 2-3 mins till golden. Turn over the fish, season with salt and reduce the heat to minimum. Continue frying till well-cooked, 3-4 mins.

Tips:

1. You may use flour instead of cornstarch, it also works well for thickening sauces. However reduce the quantity in 1,5-2 times.
2. You may alternatively bake your steaks in the oven at 170
°C.
