Preheat the oven to 170°C. Wash the salmon steaks, remove the skin, pat dry with paper towels. Sprinkle with salt and Provencal herbs, grease with oil, sprinkle with lemon juice, add thyme sprigs and bake about 20-25 mins depending on the thickness of your steaks.

Meanwhile, make the sauce: in a frying pan reduce the wine in half.
