A sauce is one of those things which can alter the taste of a dish dramatically. Today we’d like to share with your this delicious recipe of garlic and basil sauce. You may replace garlic with seasonal herbs e.g. parsley or cilantro, in the first case the taste will be more distinctive, in the second – fresh and interesting. This sauce works well not only with fish dishes; it also compliments pasta, salads and meat courses.

Step 1

Heat the oven to 180 degrees Celsius. Cut two to three garlic heads lengthwise into two equal halves. Lay garlic out on a layer of aluminium foil, sprinkle with olive oil and salt and fold the edges in so that there’s holes for the steam to come out. Cook garlic in the centre of the oven for 20-25 minutes. Wash basil and cut in small pieces.

Take out garlic and take the peel off. Add olive oil and basil to garlic, place them into a blender and make a puree. Set aside.

Cut the skin off the steaks and place on a heated frying pan with some olive oil. Add rosemary and spray with some lime or lemon juice. Fry on a medium fire for 2-3 minutes until lightly golden. Turn the steaks over, add some salt and turn the fire down to low. Cook for 3-4 minutes more until ready.

Serve the steaks with the sauce and garnish (e.g. salad, rice or potatoes).

Tips:

  1. If you have some sauce left, you may cover it with cling film and store in the fridge up to 2-3 days. You may add it to a salad, a meat dish or pasta.
  2. Basil can be replaced with parsley or cilantro.
