It also develops the flavours without using a lot of spices. Today’s recipe for a salmon and spinach pasta is just this kind!

    We use baby spinach that needs washing and drying. If you have ordinary spinach, remove the stems. Wash the salmon in cold water and pat dry with a paper towel.

    Remove the bones and the skin from the fish, cut into pieces.

    Boil the water for the pasta. Peel the garlic and mince or put through a press. In a pan with some oil quick fry the garlic. Be careful not to overheat the oil till brown. Add the fish and fry for 5 mins.

    Add the spinach to the fish. Fresh spinach reduces quickly, so don’t be confused by the amount. Cook for 2 mins.

    Pour the half-and-half and cook for 5 mins. Grate the parmesan and add 30 g of it to the sauce, mix. Reserve the remaining cheese for serving. Season the sauce to taste.

    Meanwhile cook the pasta using the instructions on the pack. Don’t overcook the pasta, as it will be mixed with the sauce and cooked till the end. The “cottura” time mentioned on the pack is the time needed to completely cook the pasta. To cook it al dente you need to reduce the time for 2 mins. Drain the pasta in the colander and don’t rinse them in cold water.

    Combine the pasta with the sauce in a deep pan. Cover with a lid and leave for 2 mins.
