Profiteroles with Olivier salad

Which dish comes first to your mind, when you hear about the New Year’s Eve? Of course, it’s the Olivier salad! But this is so clichéd and boring, you’d say. Then we suggest you to add some variety to the way of serving your favorite dish and compliment it with profiteroles. For this let’s refer to Julia Vysotskaya’ s recipe, which we have adjusted a bit. Don’t doubt that everybody will love this dish, which is a good old times classic but would be served in such an unusual manner! This recipe is also very handy because you can cook the vegetables and profiteroles in advance, and one hour before the party all you need to do is to quickly cut the salad ingredients and arrange it beautifully.

Preheat the oven to 350 F.

Put butter, sugar, salt and water into a pot over a medium heat and bring to the boil, stirring constantly. Once it has started to boil, turn off the heat right away.

Sift flour into the bowl. Add the hot butter mixture to the flour and mix in briskly.

Add eggs: add 3 eggs first, if the dough is too tough, add one more.

The dough should be glossy and smooth.

Spoon small balls of the dough onto the baking tray lined with baking paper. Place in the oven for 20-25 minutes (don't open the oven until this period is over), after that reduce the heat to 320 F and bake for another 15 minutes. Remove from the oven, leave to cool and then slice in half.

Wash 2 carrots, 3 potatoes and cook them in boiling water without peeling. Cook the eggs and chicken thighs by boiling as well. Peel and dice the vegetables.

Peel and dice the eggs. Cut the chicken meat, eggs and gherkins into cubes of the equal size.

Combine all the ingredients in a bowl, add green peas (after draining the liquid), a part of chopped green onions and mayonnaise.

Fill the profiteroles with the Olivier salad, sprinkle with the remaining green onions and cover each profiterole with its top.

Tips:

  1. The original recipe contained crab meat instead of chicken, but feel free to use either bologna sausage or boiled beef.
  2. If you have a culinary piping bag, you can use it to fill in the profiteroles. Store the profiteroles covered with a towel, but if they’ve got a bit dry, microwave them for a couple of seconds to make them soft and fresh again.

  4. Add one fresh finely chopped apple to the salad to make the flavor more exciting.
