Salad “Metropolitan” (“Stolichny”)

Ingredients

“Stolichny” salad is widely known. It was invented by one of Moscow chefs Ivan Ivanov. He used the recipe for Olivier salad and replaced some of the ingredients by more common, e.g. chicken instead of grouse, pickled cucumbers instead of capers. The salad is very tasty and satisfying and is no worse than the Olivier. So let’s cook it!

Prepare the ingredients, wash the vegetables and spring onions.

Boil the chicken breasts, eggs, carrots and potatoes. If you want, use beef instead of chicken. Peel the vegetables and eggs. Remove the skins and bones from the breasts.

Boil the peas (fresh or frozen) in boiling salted water till done but not too soft. You may also use canned peas. In this case just pour off the liquid.

Dice all the ingredients (with the side about 5 mm). Combine in a deep bowl.

Add the peas and chopped spring onions.

Mix everything well and dress with mayonnaise or sour cream. Or you may combine them (1:1). Add salt and pepper to taste and mix.
