The crunchy ciabatta, delicate roast beef and piquant sauce make the best start of the day if you have a lot to do and little time for a snack. If you roast the beef the day before, you’ll need very little time to make the sandwich in the morning. The recipe for this roast beef sandwich was taken from Olesya Kuprin’s book “Let’s have breakfast”.Meanwhile, make the sauce. In a small bowl combine the mayonnaise, sweet mustard and honey. Pour the olive oil and whisk with a fork till emulsified.

Preheat the oven to 190°C. Wash the beef (boneless meat or tenderloin) and pat dry. Coat with salt and pepper, wrap in foil and bake for 10-12 mins. Adjust the degree of doneness to your taste.

Cut the ciabatta in half broadwise and then cut each half in half lengthwise. Put the ciabatta into a suitable baking form or sheet and drizzle each piece with olive oil. Toast the bread for 5-7 mins. You may use any other bread.

Meanwhile, make the sauce. In a small bowl combine the mayonnaise, sweet mustard and honey. Pour the olive oil and whisk with a fork till emulsified.

Remove the meat and ciabatta from the oven and let cool slightly. Slice the meat, cut the pickled cucumbers in half lengthwise (or use capers), thinly slice the onion. Wash and pat dry the lettuce.

Generously spread the sauce over the ciabatta, top one piece with half meat and onions.

Top the meat with lettuce and cucumbers. Cover with another half of ciabatta. Repeat the procedure to assemble the second sandwich.
