Ricotta, spinach and mint hand pies

Ingredients

The dish originates from the Island of Corsica. The perfect combination of ingredients, crusty dough, soft filing –  it’s impossible to resist it. These super quick hand pies is a great idea for a healthy lunch, a tasty afternoon mealor an easy school lunch to pack for your kids.

Step 1

Take out the butter from the fridge in advance so it becomes room-temperature. Combine flour, salt and ground black pepper in a bowl. Add the egg and butter into the flour mix and knead the dough until smooth and elastic. Transfer the ball of dough into a bowl, cover with plastic wrap and let in the fridge about 1 hour. For the filling: unfreeze spinach, transfer it to a colander, squeeze excess liquid and chop finely. Separate the mint leaves from the stems, chop them finely. Separate the egg yolk from the white, save the white. Combine ricotta, chopped spinach, mint and melted butter, add salt and ground pepper to taste.

Step 2

Preheat the oven to 180 degrees. Transfer the dough to a floured surface and roll it well. Cut the dough in 10x10 cm squares. Place the filling in the centre.

Brush the clean border of the dough with remaining egg white, fold the corners of the dough into the centre. Transfer the piesonto the baking tray, covered with the baking paper and bake until golden brown for 15-20 min.
