Cook the rice kasha: rinse the rice well in a colander. Put it into a heavy-bottomed pan, add400 ml water. Bring to a boil and cook for 15 mins, covered, over low heat till the liquid is evaporated. Pour the milk, add salt and sugar (optional) to taste. Cover and cook over low heat for 20 mins.

Prepare the peaches. Wash one peach or nectarine, cut in half, remove the stone and cut the flesh into medium-sized wedges.

Melt the butter in the pan, add sugar and cok, stirring, for 3 mins.

Add the peaches and thyme leaves with a little cinnamon, star anise and cook for 5 mins, turning them from time to time.
