Rice casserole with raisins

Ingredients

Grain casseroles are a good idea for breakfast. Very nutritious and healthy, they may be cooked from any kasha. You don’t even have to cook them special for the recipe. If you have some kasha left after breakfast, use it for a casserole. We offer a recipe for a rice casserole with raisins. Cook it in the evening and reheat in the morning!

Step 1

Prepare the ingredients. Wash the rice thoroughly in the running water. Pour the raisins with boiling water and leave for 5 mins, then pour off the water and drain the raisins.

Put the rice into a sauté pan, pour with water and bring to a boil. Reduce the heat and cook till the liquid is fully absorbed.

Add vanilla sugar, cinnamon and salt to taste. Pour the milk and mix everything well.

Put the sauté pan over the heat again, bring to a boil. Reduce the heat till minimum and cook for 15-20 mins till the milk is fully absorbed. The kasha should have creamy consistency and not burn. Transfer it into a big bowl and let cool till room temperature. This will help to prevent the eggs from curdling.

Preheat the oven to 180°C. Add the eggs, sour cream and raisins to the kasha, mix thoroughly.

Grease the forms with butter (we used 150 ml ones) and spoon the kasha into them. Bake till golden, 20-25 mins.

You may also cook the casserole in one big form. In this case increase the cooking time. Enjoy your meal!

Tips:

You may use any dried fruits to your taste or even fresh not too juicy ones – you don’t need too much juices in your casserole!
