    Ratatouille is by far the most summery dish ever! It delivers nothing but the perfect full-flavoured vegetable taste. Ratatouille can be eaten straight away as soon as it is cooked; however it tastes even better once cooled down. Let’s cook it together!

    Step 1

    Ratatouille is by far the most summery dish ever! It delivers nothing but the perfect full-flavoured vegetable taste. Ratatouille can be eaten straight away as soon as it is cooked; however it tastes even better once cooled down. Let’s cook it together! Heat the oven to 180 degrees. Wash the eggplant and cut in circles of 2-3 mm. Put the circles into a bowl, sprinkle with some salt, stir well and leave to rest for about 10-15 minutes.

    In the meantime, cut the marrow and the tomato in the same manner as the eggplant. If the marrow isn’t an old one, you may skip peeling it; if the skin is hard, you have to take it off. Put the eggplants into a sieve, wash under cold water and dry them, using paper towels.

    Grease a baking form of 23 cm with vegetable oil and lay out the vegetable circles alternating them as you go. Salt the vegetables. Put the form into a heated oven for 15 minutes.

    Peel and cut the onion. Clean the carrots and grate on a medium grater or simply cut them. Fry the onion and carrots in a frying pan for about 10 minutes, until golden, stirring from time to time.

    Take the form out of the oven, put the onions and carrots on the vegetables so that all the vegetable circles are greased with oil. Put the ratatouille away into the oven for 20-25 minutes more. Serve with fresh herbs.

    Tips:

    1. You may replace the marrow with zucchini.
    2. Sprinkling salt over eggplants and letting them rest for some time helps to prepare them for cooking, as a result of which they absorb less oil and will hold its’ shape better. If you are in a hurry, you may skip the preparation part.
