    Tiramisu means “pick me up” in Italian. And there is a reason why! The dessert is absolutely delicate, light and airy, and will be a great finishing touch for a festive dinner or hearty meal when you can’t manage a piece of cake. Today we suggest cooking raspberry tiramisu. It is not a classical recipe, as it has no eggs. But this version of the classic will definitely be enjoyed by those who has doubts about using raw eggs or about their quality.

    Step 1

    Defrost the raspberries, pour off the excess liquid. Transfer the berries to the blender bowl and puree them. Put through a sieve to get rid of the seeds.

    In a separate bowl mash the mascarpone with a fork. Add icing sugar and mix till combined.

    Whip the cooled cream till stiff.

    Add raspberry puree to the cream. Then carefully add mascarpone in 2-3 portions, keeping the cream airy.

    Prepare the coffee (if you use ground coffee, do not forget to strain it), transfer to a wide bowl. Add the brandy, mix and let cool till room temperature.

    Break the savoiardi in 3 parts. Put a tbsp of the prepared cream into each serving glass or bowl.

    Quickly dip the savoiardi into the coffee without letting it soak too much, and put into the glasses. Continue with a layer or cream and biscuits again, till the glasses are full. Finish with the cream.

    Sift cocoa powder onto the desserts and decorate them with raspberries.

    Refrigerate the dessert for a couple of hours. Raspberry tiramisu is done! Enjoy your meal!

    Tips:

    1. You can use any berries to your taste and use fresh ones in summer.
    2. If you make tiramisu for kids, you can substitute cocoa or not very strong tea for coffee and exclude alcohol. To bring more flavour, you can also use some drops of almond essence or vanilla extract.
    3. Tiramisy can also be served as a big cake.
