Pumpkin smoothie

Ingredients

Love the pumpkin and want to see it on your table not only during the season? Then simply freeze the baked pumpkin cut into cubes. And when you feel you’re missing its taste, just make a light pumpkin smoothie within few minutes.

Step 1

If you don’t have a ready-to-use baked pumpkin you could easily make it: peel the pumpkin and remove the seeds, cut into large cubes. Spread over the baking sheet lined with a parchment paper. Drizzle with olive oil and put into the oven preheated up to 180 C. Bake for 20-30 min until soft (you could check it by piercing the pumpkin with fork). Cool the baked pumpkin down, put together with a parchment paper onto a cutting board and freeze. When fully frozen, transfer the pumpkin to small plastic bags, 150 g per each bag.

Prior to making smoothie, take the cubes of frozen pumpkin out of the fridge, chop nuts roughly and put yoghurt and cinnamon.

Blend within 30 sec until smooth, pour into glasses. Pumpkin smoothie is ready!
