Ingredients

Pumpkin baked goods are always especially soft and fluffy, so let’s make this pumpkin pull-apart bread. The technology is so that you don’t even have to cut it – just tear a piece or two. The bread remains fresh for a long time, is nicely coloured and peculiar-formed. One ore advantage is that it is vegan!

Step 1

Peel the pumpkin, cut into pieces and bake in the microwave at 800W till done. Turn off the microwave and leave the pumpkin for 2 mins.

Pour off the liquid and mash the pumpkin. Scale 180 g puree. Sift the flour with the salt into a big bowl.

Heat the apple juice till lukewarm (40-42°C). Dissolve the sugar in the juice, add 2 tbsp olive oil and dissolve the yeast. Leave for 10 mins to activate.

Add the yeast mixture and the pumpkin puree to the flour and make soft elastic dough. Cover with a towel and leave in a draught-free place to rise for 1,5 hours. Alternatively, you can make the dough in a bread maker by just putting all the ingredients into it as recommended by the manufacturer and choosing the “Kneading” mode.

Preheat the oven to 180°C. Make the filling by combining the sugar, ginger and cinnamon. When the dough is risen, dust the working surface with some flour, transfer the dough onto it and roll into a rectangular sheet. Spread the filling evenly and cut the dough into 6 equal stripes.

Stack the stripes onto each other and cut across into 5 parts.

Grease a cake form (we used a 27x12 cm) with the remaining olive oil and put the dough into it (flatly or alternating the angles). Cover the form with a towel and leave for 30 mins.

Bake for 45 mins or till golden. When the bread is done, remove from the oven and leave for 10 mins, then turn over onto a plate. Sprinkle with some icing sugar and lemon juice mixture. Pumpkin bread is done! Enjoy your meal!
