Pumpkin gnogghi with poppyseeds – this is how we literally solve the problem of a cheap and delicious dinner for a big family. The traditional recipe suggests using mashed potatoes but we insist that pumpkin is a way healthier. If you add some poppyseeds to the dough, the dish will get an interesting twist. Serve the gnocchi with honey and berries, and your dish will be a bit more exquisite and get new flavours.

Prepare the ingredients.

Wash the muscat pumpkin, peel and put into slightly salted boiling water for 20 mins. When the pumpkin is cooked, pour off the water and let cool. Mash the pumpkin with a potato masher.

Add the poppyseeds, sugar, vegetable oil and flour to the pumpkin mash. Make smooth and soft dough. You may need a bit more or less flour depending on the sort of the pumpkin.

Dust a cutting board with some flour, roll the dough into “sausages” and cut into small ovals 1,5 cm thick.

You may press your gnocchi slightly with a fork, thus making them a bit fluted, or just leave them as they are.
