Pumpkin and apples pudding

Ingredients

We suggest cooking a pudding that will be a perfect weekend breakfast or snack. Baking over a bain marie, healthy pumpkin and apples, minimum of sugar, a little exotic coconut milk – it all seems very simple, doesn’t it? And the result is worth starting cooking at once. But if you don’t have coconut milk, you may use the same amount of cow milk.

Step 1

Prepare the ingredients. Wash the apples and pumpkin. The best pumpkin is sweet, e.g. butternut.

Peel the pumpkin and remove the seeds. Dice the flesh (600 g) and transfer into a sauté pan. Add the coconut milk and cook over medium heat for about 15 mins, stirring from time to time.

Remove the core from the apples and roughly grate the flesh. Combine with the pumpkin, sugar and cinnamon and cook for 5 mins. Let cool.

Preheat the oven to 180°C. Separate the eggs and whisk the egg whites till stiff. Slightly whisk the yolks with a fork and combine with the semolina.

Combine the yolks with the pumpkin and apple mixture. Add the whites and mix carefully. Transfer the mixture to a baking form (it can be one big or several small ones). Transfer the filled form(s) into a bigger one, half-fill the latter with hot water. Bake for 25 mins (if you use small forms) or 30 mins (for a big one).
