Put the puff pastry to defrost on a working surface lightly dusted with flour.

In the meantime, put the sugar and squeeze the lemon juice out into a bowl, pour in a glass of boiling water and mix well. Wash the apples, cut in halves and remove the seeds. Cut each half in fine slices and put into the bowl with water so that the water fully covers each slice. This way the apples won’t get dark.

Put the bowl into the microwave and cook for 1-2 minutes for the apples to become soft and flexible. Put the apples onto a colander so that they don’t get overcooked.

Roll out the dough into a rectangle of 28x38 cm. Cut it into 7 equal stripes 4 cm in width each.

Heat the oven to 180 degrees Celsius. Lay out the apples so that they overlap each other and so that they are in the middle of the long side of the dough and cover with the other half of the dough.

Roll the dough from one side into a thick roll to form a rose.
