Potato waffles with cheese and spring onions

Ingredients

You probably have all the ingredients in your fridge and can’t imagine that they may make a great satisfying breakfast! Add some meat, and it may become a dinner as well. The crunchy crust and the delicate soft core are what make these waffles special. Experiment with the serving and sauces! You may even arrange a potato waffle party. Make different sauces, fry some bacon strips, cut some fresh vegetables, chicken pieces or fish. Put the sauce bowls around the waffles and let everyone decide which is their favourite!

Prepare all the ingredients. Boil the potatoes (unpeeled) in slightly salted water, cool completely, peel and mash. Melt the butter. Finely grate the hard cheese (like parmesan or Grana Padano). Wash and chop the spring onions.

Add the melted butter, cheese, milk and sour cream to the potatoes.

Mix or whisk quickly so that the ingredients are combined. Add the flour, baking powder, salt, freshly ground pepper, spring onion, minced garlic and thyme leaves.

The dough will be quite thick. Adjust the consistency by adding some milk or flour.

Preheat the waffle irons, slightly grease them with some oil and fry the waffles till golden and crunchy.
