    Today we’d like to show you how to make these insanely tasty hand pies with potatoes! This recipe is also Lenten, if you are following a special diet during the lent period. The dough comes out rather thin and very tasty, and you can invent all sorts of variations of these pies using different fillings. Enjoy the pies!

    Wash and cook the potatoes on steam (it is best to do it in a multi cooker and it takes only 20 minutes).

    Sift the flour into a bowl, add salt, sugar and yeast, mix together.

    Pour in some lukewarm water at 40-43 degrees C, vegetable oil and work with the dough until it’s homogenous. Grease the bowl with some vegetable oil, put the dough in, cover with a towel and put away into a warm place for an hour.

    For the filling, chop the onion finely and fry until transparent with some olive oil.

    Peel the potatoes and squash it with a fork, but don’t make it a purée, it’s best to leave some potato pieces for a more full-bodied flavour of the filling. Add the chopped dill, salt, black pepper, leeks and vegetable oil from the frying pan. Stir together.

    An hour later, the dough should have increased by 2-2.5 times.

    Place the dough onto the working surface and carefully cut it into 10 equal pieces. Thin out the dough with a rolling pin and put some filling into the centre.

    Fold the sides of the circle from one side to the centre and continue in the same manner, working your way around the base, sticking one side with the other.

    Flip the pie over, so that the folded part is down, and the flat one – up, and make it a nice shape using your hands.
