Potato, bean and cheese casserole

Ingredients

Do you want to make a quick supper and treat your family to a hearty and delicious meal? Then we suggest cooking this wonderful potato casserole with canned beans and tempting cheese crust. It may be served as a separate dish or with salad or sauerkraut.

Step 1

Prepare the ingredients. We recommend using canned white beans in tomato sauce.

Peel the potatoes, cut into 4-6 pieces, add water so that it just covers them. Bring to a boil, reduce the heat and boil for about 20 mins till done.

Meanwhile roughly grate the cheese and slightly heat the milk in a microwave. Preheat the oven to 200°C.

Pour the beans into a baking form (we used a 20x30cm). If there is too much liquid in the can, pour some of it off before.

When the potatoes are done, pour off the water; add salt, butter and milk. Mash the potatoes till homogeneous. Add half of the grated cheese, mix. Spread the potato mash over the beans, sprinkle with the remaining cheese. Bake for 15-20 mins till the beans are warm and the cheese is golden.

Sprinkle the casserole with chopped spring onions. Serve hot.
