Polenta with apples and plums

Porridge is a breakfast from the childhood. What about changing the usual rice, buckwheat or oats for something new? Polenta is Italian cornmeal porridge. It has vitamins B, A, E, PP and a lot of minerals. Just add some fruit, and you will have a great meal for kids, vegans, the fasting ones and true food-lovers, that means for everyone! We use Áine Carlin’s recipe as a base.

Prepare the ingredients.

Wash the apple and plums, remove the stones and the core. Cut the plums in half, dice the apple.

In a sauté pan combine plums and apples, add 1 tbsp honey, sugar, anise, cinnamon and cloves. Add 1 tbsp water. Cook over low heat for about 5 mins. Remove from heat and discard the spices. Pour off the liquid but do not squeeze the fruits.

Cook the polenta. We recommend using a heavy-bottomed pan to prevent it from sticking. Heat the water, and when it is about to boil, slowly add polenta, constantly stirring. Reduce the heat till minimum. Cook, stirring, for 1-2 mins till it has desired consistency. Season with a pinch of salt and give a good stir.

Turn off the heat, add the honey and coconut milk. Give a good stir.

Before serving top polenta with fruits and decorate with chopped pistachios.
