Fish has been an important part of Russian food culture since ancient times, especially after the Christianization of Kievan Rus’. Pike is a very special freshwater fish that is considered dietary due to its lean flesh. When baked, pike preserves most vitamins (A, B, C, E, PP) and microelements (iron, manganese, iodine, zinc, fluorine, molybdenum). Just add some apples, lemon and spices and let’s reinvent this delicious classic.

Step 1

Prepare the ingredients. They must be at room temperature. Wash the apples. Rinse the pike under running water, scale and remove the guts and gills. Thoroughly rinse the pike under cold running water. Pat dry with a paper towel.

Prepare the marinade. Mix the spices with soy sauce. Put the fish into a bowl, pour with the marinade and refrigerate for 40 mins. Turn over the fish after 20 mins of refrigerating.

Preheat the oven to 180°C. Wash the apples (sweet ones are preferable) and the lemon. Cut them into wedges.

Remove the fish from the fridge, transfer to a baking tin. Stuff the belly with apple and lemon wedges (alternating). Put the rest of apple wedges to the same baking tin. Pour half of the marinade, cover with foil and bake in the middle of the oven about 40 mins.

Pike with apples is done. Wash the lettuce leaves and drain. Cover the serving dish with them, put the pike on top.
