Soak the pearl barley in water for 2 hours. After that, wash thoroughly and prepare the ingredients.

Pour the pearl barley with 800 ml water and cook over medium heat. Bring to a boil, add salt and cook, covered, for 30-40 mins. When the water is almost fully evaporated, test the grain – it should be cooked but not too soft. If the pearl barley is still hard, add another 200 ml water. If the grain is cooked but there’s still some liquid, drain the grain in the colander.

Meanwhile, peel and finely dice the onion.

Finely chop the sun-dried tomatoes.

Add the tomatoes and the onions to the pearl barley immediately. Dress with olive oil and add salt to taste. Mix.
