Pear pudding

Ingredients

If you love delicate desserts, do try this pudding. Find fragrant pears hidden under the airy pudding. Or use apples instead.

It all began with gingerbread: they began to get better, she wanted to shoot them on a technique more professional than a digital soap box. Irina got on courses on a food photo, and it was hooked! For the practice of shooting it was necessary to shoot something every day - so, she was carried away by cooking. Every day she learns something new: both the possibilities of her camera, and new dishes!

Prepare the ingredients. We recommend using not too ripe pears, or some hard sorts. Preheat the oven to 200°C.

Peel the pears, remove the core and dice the flesh, 1-1,5 cm big.

Put the pears into a sauté pan and pour the water to fully cover them. Add the cloves. Bring to a boil and cook for 2 mins.

Reserve 4 tbsp pear water, discard the rest. Spread the pears evenly to cover the bottom of a baking form (we used a 24x16 cm).

Reheat the reserved pear water in a sauté pan over medium heat and add the butter to melt.

Add the flour and mix quickly to avoid lumps.

Gradually add the milk and bring the mixture to a boil, stirring energetically all the time. As soon as the mixture thickens, add the sugar. Keep stirring so that the sugar is fully dissolved. Remove the mixture from heat and cool till 40°C.

Separate the eggs into yolks and whites. Whisk the whites till stiff.

Add the yolks into the warm (not hot!) milk mixture and mix.

Add the whites in 2-3 parts, folding them carefully into the mixture.

Pour the batter over the pears.

Use a spatula to spread it evenly.

Bake in the middle of the oven for 15 mins, reduce the temperature to 180°C and cook for 35 mins till nicely golden. Pear pudding is done! Enjoy your meal!
